Quinoa Burgers

INGREDIENTS
1 cup (200g) uncooked quinoa400g tinned adzuki beans, rinsed and rained220g medium-firm tofu ⅓ cup (20g) nutritional yeast 1 tblsp tomato paste (concentrated purée)½ tsp best-quality salt, plus extra to cookLots of pepperGrapeseed oil, for fryingBun, mayo, pineapple, beetroot, tomato, relish, cheese, lettuce, to serve METHOD
1 Cook quinoa according to packet directions, then transfer to a large bowl and add all other ingredients except the frying oil. Mix everything together well, mashing the tofu and smashing the adzuki beans as you go – kneading everything, even! – until well combined.
2 Shape the mixture into 6 patties, each about 155g and about 11cm in diameter. Spread them out on a tray and refrigerate until needed, at least 2 hours.
