It’s been a spectacular year for Miranda Tapsell. Not only did the talented and versatile actress get engaged to the love of her life, James Colley, but her feature film Top End Wedding, in which she starred, as well as wrote and produced, has been chosen to be premiered at the Sundance Movie Festival in 2019. ■ Serves 6, Cook 12 mins, Prep 13 mins, plus 2 hours WHAT YOU NEED 4 x 200g lamb backstraps 3 large yellow peaches 2 x 125g bunches rocket, trimmed, torn 350g tub marinated feta, drained ½ cup fresh mint leaves Balsamic vinegar glaze, to serve MARINADE 2 tblsps olive oil 3 cloves garlic, crushed 2 tsps paprika 2 tsps ground cumin 1 tsp ground coriander 1 To make marinade, combine all ingredients in a large bowl. Mix well. 2 Add lamb to marinade. Turn to coat. Refrigerate, covered, for 2 hours. 3 Cut peaches in half. Remove and discard stones. There is a theory that 2018 has been the craziest year ever. Maybe that’s an exaggeration.
