SWEET POTATO PASTRIES Not quite sweet, but not savoury either… Ingredients 8 pastries 4 sweet potatoes 30 ml olive oil Salt and freshly ground black pepper 6 oregano sprigs 1 x 500g roll flaky pastry 10ml fine cinnamon 30ml brown sugar 80ml Persian Pomegranate & Five Spices balsamic vinegar Method 1. Preheat oven to 180ºC. Place sweet potatoes, olive oil, oregano, salt and pepper in an oven-proof dish. Roast for 20-25 minutes or until soft and cooked. 2. Cut the flaky pastry into rectangles of 7x5cm and place on a baking tray lined with baking paper. 3. Slice the cooked sweet potatoes into rings and place on top of the pastry.
