Growing up, Mashudu Tshivhase was “a very artistic child. My mom always showered me with crayons, paints and all the other tools to enhance my skills.” In hindsight, that laid the foundation for Mashudu’s career in architectural design. SALMON FISH CAKES Ingredients 12 baby potatoes ¼ cup chopped chives ¼ cup chopped basil 4tsp fish sauce 200g hot-smoked salmon Salt and pepper 1 egg 1 cup flour 4 egg whites 2 cups breadcrumbs 2 cups oil 4 egg yolks 2 lemons, juice Method 1. Boil potatoes until soft. Set aside to cool. Cut the potatoes into small cubes. Mix with basil and fish sauce. Break the salmon into small chunks and mix with potatoes. Season with salt and pepper. 2. Stir the egg into the mixture. Divide into balls and shape into 7cm-wide cakes. Wet hands with water when moulding to prevent from sticking.
