Boston baked beans

1 brown onion, chopped finely300g piece speck, rind removed, chopped finely¼ cup golden syrup⅓ cup firmly packed brown sugar2 tbsp Dijon mustard1 tbsp Worcestershire sauce1 tbsp hot chilli sauce400g can crushed tomatoes400g can cannellini beans, rinsed, drained400g can butter beans, rinsed, drained400g can borlotti beans, rinsed, drained3 cups salt-reduced chicken stock½ cup finely chopped flat-leaf parsley
1 Place onion, speck, syrup, sugar, mustard, sauces, tomatoes, beans and stock in a 4.5-litre (18-cup) slow cooker. Cook, covered, on low, about 9 hours. Uncover, cook, on low, for 1 hour or until thickened slightly. Season to taste.
2 Serve beans sprinkled with parsley.
