Mexican Sausage Rolls
MAKES 35 PREP & COOK 1 HOUR
■ 5 slices white sandwich bread, crusts removed, torn
■ ⅓ cup milk
■ 1 small onion, finely chopped
■ 30g sachet taco spice mix
■ 500g sausage mince
■ 1 egg, separated
■ ½ cup finely chopped fresh coriander
■ 300g jar medium chunky tomato salsa
■ 2½ sheets frozen puff pastry, just thawed
1 Place bread in a large bowl with milk. Stand for 5 minutes, or until liquid is absorbed.
2 Meanwhile, heat a lightly oiled, medium, non-stick frying pan over a medium heat. Add onion. Cook, stirring occasionally, until soft. Add spice mix. Cook, stirring, for 1 minute. Remove from heat. Allow to cool.
