Maple and Chilli Sweet Potato Smash Serves 6, Prep and Cook 35 mins 1.25kg sweet potato, peeled, cut into 4cm pieces 2 tblsps olive oil 2 tblsps maple syrup 2 long red chillies, deseeded and finely chopped ¼ cup sour cream ¼ cup finely chopped fresh chives 1 Boil, steam or microwave sweet potato until tender.
