Cherry Lime Tart Serves 8, Prep: 35 mins 250g packet Granita Biscuits 100g unsalted butter, melted 400g fresh cherries Whipped cream, to serve FILLING 500g cream cheese, chopped, at room temperature 395g can sweetened condensed milk 3 tsps finely grated lime rind 2 tblsps lime juice 1 tsp vanilla extract 1 Grease a 24cm round loose-base flan tin. 2 Process biscuits in a food processor until finely crushed.
