Chargrilled Capsicum and Bean Salad Serves 6, Prep and Cook: 20 mins 200g green beans, trimmed 200g yellow beans, trimmed 1 yellow capsicum, cut into 2cm strips 1 red capsicum, cut into 2cm strips ½ tsp dried chilli flakes 100g baby spinach leaves 2 firm ripe avocados, chopped ¹/ ³ cup toasted pine nuts DRESSING 2 tblsps light olive oil 2 tblsps red wine vinegar 1 clove garlic, crushed 2 tsps horseradish cream 1 tsp honey 1 To make dressing, combine all ingredients in a small jug. Smoked Salmon on Avocado Smash Serves 4, Prep: 20 mins 1 Lebanese cucumber 2 Turkish rolls 200g sliced smoked salmon 1 tblsp baby capers Crème fraîche, watercress sprigs, lemon wedges and lemon-infused Australian extra-virgin olive oil, to serve AVOCADO SMASH 1 large avocado (300g) ½ tsp finely grated lemon rind 1 tblsp lemon juice 1 To make avocado smash, peel and deseed avocado. Place in a bowl. Coarsely mash. Add the remaining ingredients. Season with salt and pepper. Stir to combine. 2 Using a mandolin, slice the cucumber into long, thin ribbons. 3 Cut rolls in half horizontally. Toast until golden brown. Spread avocado smash onto cut side of rolls.
