Creamy Bacon and Mushroom Tortellini
Serves 2, Prep and Cook: 20 mins
375g packet fresh veal tortellini 2 tsps olive oil 4 shortcut bacon rashers (100g), chopped 150g button mushrooms, sliced 2 cloves garlic, crushed 250ml tub light sour cream ½ cup finely grated parmesan ¼ cup chopped fresh chives Extra finely grated parmesan and cracked black pepper, to serve Fresh chives, to garnish 1 Cook fresh tortellini according to packet directions. Drain. Cover to keep warm.
2 Heat oil in a large, non-stick frying pan over a medium heat. Add bacon. Cook, stirring, for about 3 minutes, or until crisp. Add mushrooms and garlic. Cook, stirring occasionally, for›about 2 minutes, or until tender. Stir in sour cream until›hot.
