Chicken and Prawn Paella

2 tblsps olive oil 1 chorizo, chopped 250g chicken thigh fillets, trimmed, chopped 250g raw peeled prawns with tails intact, deveined 2 cups chicken stock Pinch saffron threads 1 onion, finely chopped 1 red capsicum, chopped 4 cloves garlic, crushed 2 large ripe tomatoes, finely chopped 1 tblsp smoked paprika 1 cup Arborio rice ½ cup frozen peas Lemon wedges, to serve 1 Heat half the oil in a large frying pan over medium to high heat.
