Lime and Coconut Mug Cakes Serves 4, Prep and Cook: 20 mins Melted unsalted butter, for greasing ¹/ ³ cup frozen raspberries 1 tblsps icing sugar mixture 150g unsalted butter, melted, cooled ½ cup milk 3 eggs, lightly beaten 1½ tsps finely grated lime rind 1 cup caster sugar ½ cup desiccated coconut 1 cup self-raising flour ½ cup thickened cream Toasted coconut chips, to serve 1 Lightly grease four microwave-safe mugs (1½-cups capacity) with butter. 2 Place raspberries on a plate.
