Mango and White Chocolate Cheesecake Tart Serves 8, Prep 35 mins 250g packet Granita biscuits 125g unsalted butter, melted Whipped cream, to serve FILLING 180g white chocolate, chopped 1½ x 250g blocks cream cheese, chopped, at room temperature ½ cup thickened cream 1 tsp vanilla bean paste MANGO SWIRL 1 medium mango, peeled 1 tsp powdered gelatine 2 tblsps water 1 Grease a 13cm x 35cm rectangular loose-base flan tin. 2 Process biscuits in a food processor until finely crushed. Potato and Rosemary Bake Serves 6, Prep 15 mins, Cook 1 hour, 25 mins Melted butter, for greasing 300ml carton pure cream 1 tblsp finely chopped fresh rosemary 1 clove garlic, crushed 1 tsp onion powder Salt and pepper, to taste 1.3kg brushed potatoes, peeled 1½ cups grated cheese blend 1 Grease a rectangular ovenproof dish (8-cup capacity) with butter. 2 Whisk together cream, rosemary, garlic and onion powder in an extra large bowl.
