Mexican Beef Quesadillas
Serves 4, Prep 20 mins, Cook 12 mins
500g beef mince
375g jar medium thick and chunky salsa
6 x 20cm flour tortillas
2 cups grated Perfect Italiano Perfect Bakes cheese
Sour cream, to serve
Fresh coriander sprigs, to garnish
1 Heat an oiled, large, non-stick frying pan over a high heat. Add beef. Cook, stirring, to break up mince, for about 3 minutes, or until browned. Add 1 cup of the salsa. Bring to boil. Cook, stirring, for 2 minutes. Remove from heat. Cool slightly.
2 Spoon ½ cup of the beef mixture onto one half of each tortilla. Sprinkle evenly with cheese. Fold over other side of tortilla to enclose filling.
