Mango and Passionfruit Eton Mess Makes 4, Prep 15 mins 300ml tub thickened cream ¼ cup sour cream ¼ cup fresh passionfruit pulp 2 tsps caster sugar 2 large mangoes (400g) 100g packet meringue nests Extra passionfruit pulp, to decorate 1 Beat cream, sour cream, passionfruit and sugar in a small bowl of an electric mixer until firm peaks form. 2 Cut away cheeks from mangoes, either side of the stones.
