BABA GANOUSH Impress your friends with crowd-pleasing aubergine dip and donate to UNICEF’s Syria Relief fund at the same time. INGREDIENTS • 1 aubergine• 4tbsp greek yogurt• 2tsp tahini• 1 clove of garlic, crushed• 1 squeeze of lemon• Olive oil to garnish• Pine nuts to garnish• Pomegranate seeds (optional) METHOD 1 Preheat the oven to 200°C/ 400°C/gas 6. 2 Wrap the aubergine in aluminium foil and bake in the oven for about 30 minutes. (The alternative here is to slice up the aubergine and deep-fry it.) 3 Take the aubergine out of the oven, then peel it, mash it and mix it in with the crushed garlic. 4 Add the yogurt, tahini and lemon 5 juice and mix well.
