CHORIZO AND PRAWN KEBABS Serves 6-8 PREP TIME: 15 minutes, plus cooking time 200ggoodqualitychorizo thickly sliced 200g fresh prawns, butterflied and deveined bay leaves 2 cloves garlic, crushed ½ tsp chilli flakes 3 tbsp olive oil 2 tbsp finely chopped parsley salt and milled black pepper 1. Thread the chorizo, prawns and a bay leaf onto skewers. 2. In a bowl, mix together the garlic, chilli and olive oil and drizzle over the skewers. 3. PEACHES AND CREAM POPSICLES Makes 10 popsicles PREP TIME: 30 minutes, plus freezing time For the peach layers 2 x 400g cans peach halves in syrup juice of ½ lemon For the cream layers 250g mascarpone cream 1 cup cream 1 tsp vanilla extract ¼ cup castor sugar 1. Drain the peach halves. Purée the peaches with the lemon juice until smooth. 2. In a bowl, whisk together the cream layer ingredients until well combined. 3. Place a layer of the peach mixture into each popsicle mould, insert wooden or plastic popsicle sticks and freeze for 30 minutes, then top with an equal layer of cream mixture and freeze again.
